Hi and welcome to the salt squad! Pairs would make some movement easier, but they are not required. Regarding the range of weights, that’s really up to you and where you are in your lifting journey. Light weights or heavy weights can be very different to everyone so that’s why I don’t give ranges. When I first started lifting, I started with 5s, 10s, 15s and 20s. I felt I had enough range here to move up in weight or down. Maybe this will give you an idea where to start, but ultimately is up to you. Let me know if you have any questions.
